PIZZA with Sweet Potato Base (makes two pizzas)

INGREDIENTS

FOR THE BASE
◙  1 kilogram of sweet potato
◙  225 grams of (glutenfree) flour
◙  Two tablespoons of olive oil
◙  Salt and pepper to taste

FOR THE TOPPINGS
◙  Tomato paste or tomato sauce
◙  Sweet peppers/Cherry tomatoes
◙  Red onion
◙  Olives
◙  Mozzerella
◙  Old cheese
◙  Salt, pepper, herbs and spices to taste

Feel free to add any kind of topping you want. Think: Tuna, Chicken, Pesto, Salmon etc. etc.

◙  Food Processor

Now it is time to cook! --> Pre-heat the over to 200 degrees celcius.
Peel your sweet potatos and cut them in even pieces. Mix it with the olive oil, salt and pepper and grill them in the over for a good 20 minutes until golden.

In the meantime, prepare your toppings. If you want let your guest or yourself be creative, put your different toppings into bowls and put them on the table so everyone can make their own pizza to taste.

Take the sweet potatoes from the oven and put them in your food processor. Add your flour and mix it. Make sure you don't mix it too long, or your mixture will be too thin. Take a two plates for the oven and spread the mixture onto them (half and half) in any kind of shape or size you want, just spread it out evenly. Bake the base in the over for about 20 minutes, until golden.

When done, take them out of the oven and start topping with your tomato paste or sauce. After that every other addition is up to you or your guest, go nuts! When done being creative, put the pizzas back into the oven for another 15 to 20 minutes.
