LASAGNA

INGREDIENTS (SERVES ABOUT 6 PEOPLE)

◙  two packs of (gluten-free) pasta sheets
◙  two zucchinis
◙  some carrots
◙  three bell peppers
◙  two red onions & 3 gloves of garlic
◙  one broccoli or cauliflower
◙  a few handfuls of (fresh) spinach
◙  one leek or a few celery sticks
◙  two cans of tomato pieces & a small can of tomato paste
◙  italian herbs, turmeric, smoked paprika, cinnamon, pepper and salt to taste

◙  old dutch cheese (or vegan cheese)
◙  fresh basil

◙  olive oil

Now it is time to cook! (Preheat the oven to 180 degrees celcius)
Sweat the onions and garlic with a little olive oil in a large pan. Add in the rest of the vegetables one by one, only leave the spinach out. When all the veggies are partly cooked, pour in the cans of tomato pieces and tomato paste. When you've created an even mixture, add in the herbs and spices. And let it simmer on a little bit.

Let's get building! Now take a large tray you can put into the oven. Start with a layer of sauce, cover it with pasta sheets and if chosen this option, cover the pasta sheets with (vegan) cheese. Do these steps over and over until you've run out of sauce. End with a layer of (vegan) cheese for a crunchy crust.

When you used (pre)cooked pasta sheets, it need to go in the over for about 20 minutes. When you used uncooked pasta sheets, calculate a time of about 40 minutes to about an hours that it need to cook in the oven.

Take your lasagna out of the oven and garnish it with your fresh basil. Now, get the kids, your partner or freeze the pieces you haven't eaten en make it easier for yourself the rest of the week. ps. if you end up not having enough saucy sauce to finish off the tray, you can always add a little bit of water, almond milk or tomato sauce to create that little bit more you need. No panic. All will be fine!
