BLACK BEAN BURGER (Recipe for 4 burgers)

INGREDIENTS

FOR THE BURGERS
◙  One tin can of black beans (drained)
◙  Half a tin can of corn (drained)
◙  6 tabelspoons of (grinded) oats --> glutenfree if prefered.
◙  One red onion
◙  Two gloves of garlic
◙  One teaspoon of cumin
◙  One and a half teaspoon of smoked paprika
◙  Pepper and salt to taste

FOR THE SALSA
◙  Three tomatoes
◙  Small tin can of tomato paste
◙  One red onion and a glove of garlic
◙  The rest of the corn
◙  Lemon juice to taste
◙  Fresh herbs (coriander)
◙  Pepper and salt to taste

◙  As many buns as burgers your making
◙  One or two ready to eat avocados
◙  Rocket of mixed green leaves
◙  Red onion to taste

◙  Food Processor

Now it is time to cook!
Add a little olive oil to a frying pan and fry your red onion and garlic for a short minute. Add these together with the beans, corn, smoked paprika and cumin into a food processor. Make sure the mixture is still a little crumbly, but strong. Mix in the oats and add the salt and pepper to taste. Put your burger dough into the fridge for 15 to 20 minutes so it will be easier to work with.

In the meantime, make your salsa. Cut up the tomatoes, onion and garlic. Add all the ingredients to a bowl and mix it until your content with the texture and taste. Put this in the fridge until ready to eat.

Take your burger dough and with your hands and the help of a little extra (glutenfree) flour if necessary, roll balls and flatten them into the shape of the burger you see happening.

Add some olive oil to a pan and make sure it's really hot before you put in the burgers. Fry them until they are golden and flip them as much as possible so all sides are fried evenly. If you want to avoid frying (because of calories or otherwise), put the burgers into the over for a good 15 to 20 minutes at 190 degrees.

Serve your burger with the buns, rocket, avocado and red onion or let all the people joining your table figure it out for themselves and maybe have a good laugh about the difficulty of eating those too.
