CHOCOLATE CHIP MUFFIN

INGREDIENTS (MAKES 12 MUFFINS)

◙  3 very ripe bananas
◙  one egg
◙  120 grams of maple syrup
◙  60 grams of unsweetened apple sauce
◙  30 grams of unsweetened cocoa powder
◙  one teaspoon of baking powder
◙  140 grams of (instant) rolled oats
◙  120 grams of (glutenfree) flour

◙  180 grams of chocolate chips 

◙  electric whisk
◙  regular size muffin tin

Now it is time to cook!
Preheat your oven to 180 degrees celsius. Take a large mixing bowl and add the bananas (mashed), apple sauce, egg and maple syrup. Blend until a glossy mixture is created. Then, mix in the cocoa and baking powder.

If your not using instant oats, make sure you grind them into a flour-like consistency. Add the oats and flour into the mix and mix everything thoroughly. Fold in the chocolate chips, but leave a bit to garnish with later.

Divide the mixture over the muffin tray. It's a good thing to use some kind of oil to make sure the muffins won't stick to the tray.

Bake the muffins for about 20 to 25 minutes. You know they are ready when the batter is cooked all the way through. To be sure, use a toothpick or fork and stick it into one of the muffins. Make sure they are cooled for a little bit before you remove them from the muffin tin.

You're able to refrigerate them and keep them good for a little while longer. You can also put them in the freezer and take them out whenever you have a busy morning, but need something to get through to lunch.
